Toddler Friendly Lentil Stew


Not exactly sure what to feed your toddler? This hearty, toddler friendly meal is not only delicious, it's healthy too! Lentils are great and they're cheap. You can even grow them yourself which I plan on doing during my next gardening season.

One cup of cooked lentils has about: 

  • 230 calories

  • 18 grams protein

  • 15 grams of fiber

  • 3.5 grams sugar

  • less than 1 gram fat

  • 358 milligrams folate 

  • 6.6 milligrams iron

  • 731 milligrams potassium

  • 71 milligrams magnesium

  • 0.4 milligrams vitamin B6 

  • 1.3 milligrams vitamin B5/pantothenic acid

This meal is also good for vegetarians and moms who are raising vegetarians. But if you like meat, feel free to add ground chicken or beef to this stew. 

Jai loves lentil stew. The veggies are cooked perfectly. Not mushy, but soft enough for him to "chew" (he only has two bottom teeth & the two top teeth haven't come down 100% just yet).


What you'll need:

1 Knorr chicken bouillion cube

1 Knorr mini garlic cube

1 Knorr mini onion cube

2 1/2 cups of water

1 tbsp of avocado oil

1/3 cup of green lentils

1/3 cup carrots, chopped

hand full of cherry tomatoes

2 small red potatoes or one large red potato

Cooking the stew is as simple as throwing everything in the pot, putting it on low heat and letting it simmer for 45 minutes or until your veggies are soft. It's also a great meal for cold or rainy days.
