Shrimp Salad

One of my favorite Spanish restaurants is La Cazuela, in Waterbury, CT. With every meal I order, it's a must that I get their shrimp salad. That's if it's not gone, they sell out fast. One day I tried to make it myself but for some reason, I could not get the taste right.
It was frustrating because...I mean, it's shrimp salad. How hard could it be. Shrimp, raw green peppers, raw red onion, etc. But every time I made it, something was missing and I couldn't figure out what it was, until...

One day, I wanted something simple, fresh and crisp...with shrimp in it lol. After tossing some simple ingredients together and tasting it, I realized that what I made tasted like the shrimp salad I get from La Cazuela. Holy shit right? Some of the best dishes happen by accident.
What you'll need
red onion
green pepper
cherry tomatoes
1 cup of shrimp
Italian dressing
black pepper
Cook your shrimp by sauteing them in a pan with some olive oil (or whatever you have handy). Then put them in the fridge to cool them. Slice your red onion, cherry tomatoes and green pepper. About 1/3 cup of each just to give you an idea of how much I used.

Once your shrimp are cooled, put them in the bowl with your sliced veggies and LIGHTLY coat everything with some Italian dressing.


Then sprinkle a little black pepper on top. Honestly, how simple is this? And I'm sure La Cazueala makes their own dressing, but how did I not realize that whatever they use, tasted similar to Italian dressing?
To get better flavor, let it marinate for about an hour or so. Most of the time, I can't wait, I eat it as soon as I'm done. This is a perfect little snack I like to enjoy often, I hope you enjoy it too!
