Salmon With Basil & Spinach Pesto

Salmon is my favorite fish to eat, and the kids love it too. It's easy to cook, and perfect for when you need to make a quick meal for lunch or dinner.

Here's what you need:
8 Salmon filets
1 cup of basil
1 cup of spinach
2 pinches of Sea salt (I used smoked sea salt)
Olive oil
1 garlic clove
Garlic powder
Onion powder
Seasoning salt
Cherry tomatoes
1 box of fettucci
Directions:
Place salmon into baking pan. Chop your tomatoes and place them on top of the salmon fillets. Sprinkle seasoning salt, garlic powder and onion powder on salmon and tomatoes. Place baking pan in the oven on 350°.
For the pesto, add basil and spinach into a food processor. If your food processor doesn't have a small opening in the top to pour liquids like mine does, add a bit of olive oil before closing the top. Blend well and add enough oil until you get a nice paste, but not to thick. You want to be able to spread it easily. Add pinches of salt and garlic clove, then blend again. Now, cook your pasta.
Once salomon is baked, spread a little pesto on each filet. Then use the rest for the pasta. It may not look like a lot, but you only need enough to coat the pasta. You don't want it to be saucy.
