Dairy Free Ice Cream

This ice cream recipe is a basic ice cream base that you can use to make any flavor ice cream you like.
Here's what you'll need:
3 cans of full fat coconut milk
3 tbsp of vanilla extract
16oz of dairy free sweetened condensed milk
Optional: fruit compote
Directions:
If you are using fruit, make a fruit compote by simmering 1 cup of fruit of your choice in 1 cup of water and a half cup of sugar. Simmer until it's reduced to half, and allow it to cool in the refrigerator while you're making your ice cream base.
Before you start your ice cream base, put two can of coconut milk in the refrigerator for at least 30 minutes. This will cause the coconut fat to separate from the coconut water. Once the can of coconut milk is chilled, open it and scoop the fat from the top. The coconut water will be at the bottom. Don't throw it out, though. You can use it in a smoothie or just drink it. Coconut water is very hydrating.

Once you separate the fat, whip it for about 5 minutes or until it starts to become fluffy. After 5 minutes, add in your dairy free sweetened condensed milk and continue to whip for about 3-4 minutes. While it's mixing, add in your vanilla extract. Turn off the mixer and strain your fruit compote, but keep the leftover syrup. Ddd your fruit and mix it in with a spatula. No need to turn the mixer back on.
Place your ice cream in the freezer for about an hour. The top will be slightly firm. Take it out and drizzle the syrup from the compote on top and swirl it around. This is completely optional, but fun.

Allow your ice cream to freeze overnight. It can take quite a while to firm up. But if you start early in the morning, it will be ready for an after dinner dessert.
