Coconut Chia Fruitsicles

If you know me, you know I LOVE coconut.
Coconut Chia Fruitsicles are a great, healthy, summer time treat for kids and adults.

What you'll need
Chia seeds
Coconut water
Frozen (or fresh) berries
Ice pop tray
Bottle
Goya is one of my favorite brands of coconut water. I like that it has coconut chunks in it. Make sure you get actual coconut water and not that fancy crap like Vitacoco or Bai. Those are full of nothing but artificial flavors and sugar.

Chia seeds are great for hydration and the digestive system. When soaked, they expand and create a gel like bubble around each seed.

I usually like to soak my chia seeds over night. But they will expand if soaked for a few hours. Chia seeds will not expand if soaked in citrus. If you want a citrus flavor, soak your seeds in water, strain them, then add whatever citrus juice you like.
I soaked 2 tbsp of chia seeds in 8oz of cocout water over night.

Get your ice pop tray and your fruit ready!

I picked this one up at Walmart for .98 cents.

Choose any frozen berries you like.

Put your berries in the ice pop tray first, then pour in your soaked chia seeds WITH the coconut water and put it in the freezer.

After a few hours, pop 'em out and enjoy!
